Coconut-Sriracha Chicken Tenders

  1. Place a baking sheet in the oven
  2. Preheat to 450F
  3. Sprinkle chicken with onion powder, salt, and pepper
  4. Pulse coconut and cereal in a food processor until finely chopped & transfer to a shallow dish
  5. Whisk egg with sriracha in a third shallow dish
  6. Dredge the chicken in flour, shaking off excess
  7. Coat with the sriracha mixture, letting excess drip off
  8. Dredge in coconut mixture, pressing to adhere
  9. Remove baking sheet from the oven and coat in cooking spray
  10. Bake, turning halfway, until browned, 12-14 minutes
