Kale and White Bean Soup

 Heat 2tbs olive oil in a large pot over medium-high heat Add 4 cloves of chopped garlic, 2 stalks of celery sliced, 1 large onion chopped, 1.5tsp salt, 1/2tsp pepper. Cook, stirring occasionally, until tender, 4 to 6 minutes Add 2 15.5oz cans of cannellini beans, rinsed, 1 cup small soup pasta, 1 bunch of kale, thick stems removed & torn into 2-inch pieces, 2 tbs chopped rosemary, 8 cups water, parmesan rind. Cover and bring to boil. Reduce heat and simmer until pasta and kale are tender, 4 to 5 minutes Remove rind Stir in 1tbs lemon juice Sprinkle with parmesan Serve with bread

Smoky Fish Chowder

 In a large pot, brown 8oz of Spanish chorizo over medium-high heat, 1 to 2 minutes Add 4 leeks (white and green parts), cut into 1/2-inch pieces, cook, stirring occassionally, until they soften, 3 to 4 minutes Add 1.5lbs of Yukon gold potatoes, cut into 1/2-inch pieces, 1 28oz cans of diced tomatoes, 3 cups water, 3/4tsp salt, and 1/4tsp pepper Bring to a boil Reduce heat and simmer until the potatoes are just tender, 10 to 12 minutes Add 2lbs skinless firm white fish, cut into 2-inch pieces Simmer gently, 5 to 6 minutes, until fish is cooked throughout Stir in parsley before serving

French Onion Soup

Vertically slice 4 cups of Walla Walla or other sweet onions Vertically slice 4 cups of red onions Heat olive oil in a Dutch oven over medium-high heat Add onions & saute for 5 minutes or until tender Reduce heat to medium & cook for 20 minutes, stirring frequently Increase heat to medium-high and saute for 5 minutes or until onion is golden brown Stir in 1/4 cup of dry white wine & cook 1 minute Add 8 cups of less-sodium beef broth and 1/4 tsp of chopped thyme Bring to a boil Cover, reduce heat, & simmer 2 hours

Preheat oven to 425F Halve chicken breasts Combine bread crumbs and parmesan Bake 30-35 minutes

Butternut, Apple, Potato Soup

 Start the broth and 2 bullion cubes in a big pot over medium-high heat  Peel, deseed, & cube one butternut squash Peel & cube 1 russet potato & add Peel & cube 1 sweet potato & add Peel, core, & cube 1 apple & add Cook about 10 more minutes (until everything is soft) Add 1/8 tsp cinnamon Add a pinch of nutmeg Add salt & pepper Fold in the cream cheese Blend it with a hand blender

Bring 2 quarts of water to a boil Add alt and pasta Cook to al dente Drain Pour onto a large lipped baking sheet to cool while prepping sauce Microwave the milk & chicken broth in a 4-cup Pyrex measuring cup or bowl until hot and steaming (not boiling) Melt butter in the empty pasta pot Whisk in flour Whisk in hot milk mixture Whisk until thick & bubbly Stir in cheddar Add pasta and stir Heat through Add water if too thick

Chocolate-Chip Mocha Cheesecake

 Position rack in the center of the oven Preheat to 200F Butter bottom and sides of a 9.5-inch springform pan Combine crumbs, butter, & 1/3 cup sugar in medium bowl and mix well Pat evening onto bottom and sides of prepared pan Beat cream cheese in large bowl of electric mixer until fluffy Add eggs one at a time, beating well after each addition Add cream, coffee, and vanilla and beat for 2 minutes Turn mixture into prepared crust Top with chocolate chips and swirl through with spatula Set pan on baking sheet Bake until tester comes out clean, about 2 hours Cool completely on rack Chill thoroughly

Coconut-Sriracha Chicken Tenders

Place a baking sheet in the oven Preheat to 450F Sprinkle chicken with onion powder, salt, and pepper Pulse coconut and cereal in a food processor until finely chopped & transfer to a shallow dish Whisk egg with sriracha in a third shallow dish Dredge the chicken in flour, shaking off excess Coat with the sriracha mixture, letting excess drip off Dredge in coconut mixture, pressing to adhere Remove baking sheet from the oven and coat in cooking spray Bake, turning halfway, until browned, 12-14 minutes
