Chocolate-Chip Mocha Cheesecake
- Position rack in the center of the oven
- Preheat to 200F
- Butter bottom and sides of a 9.5-inch springform pan
- Combine crumbs, butter, & 1/3 cup sugar in medium bowl and mix well
- Pat evening onto bottom and sides of prepared pan
- Beat cream cheese in large bowl of electric mixer until fluffy
- Add eggs one at a time, beating well after each addition
- Add cream, coffee, and vanilla and beat for 2 minutes
- Turn mixture into prepared crust
- Top with chocolate chips and swirl through with spatula
- Set pan on baking sheet
- Bake until tester comes out clean, about 2 hours
- Cool completely on rack
- Chill thoroughly
