Chocolate-Chip Mocha Cheesecake

  •  Position rack in the center of the oven
  • Preheat to 200F
  • Butter bottom and sides of a 9.5-inch springform pan
  • Combine crumbs, butter, & 1/3 cup sugar in medium bowl and mix well
  • Pat evening onto bottom and sides of prepared pan
  • Beat cream cheese in large bowl of electric mixer until fluffy
  • Add eggs one at a time, beating well after each addition
  • Add cream, coffee, and vanilla and beat for 2 minutes
  • Turn mixture into prepared crust
  • Top with chocolate chips and swirl through with spatula
  • Set pan on baking sheet
  • Bake until tester comes out clean, about 2 hours
  • Cool completely on rack
  • Chill thoroughly
