French Onion Soup
- Vertically slice 4 cups of Walla Walla or other sweet onions
- Vertically slice 4 cups of red onions
- Heat olive oil in a Dutch oven over medium-high heat
- Add onions & saute for 5 minutes or until tender
- Reduce heat to medium & cook for 20 minutes, stirring frequently
- Increase heat to medium-high and saute for 5 minutes or until onion is golden brown
- Stir in 1/4 cup of dry white wine & cook 1 minute
- Add 8 cups of less-sodium beef broth and 1/4 tsp of chopped thyme
- Bring to a boil
- Cover, reduce heat, & simmer 2 hours
