French Onion Soup

  • Vertically slice 4 cups of Walla Walla or other sweet onions
  • Vertically slice 4 cups of red onions
  • Heat olive oil in a Dutch oven over medium-high heat
  • Add onions & saute for 5 minutes or until tender
  • Reduce heat to medium & cook for 20 minutes, stirring frequently
  • Increase heat to medium-high and saute for 5 minutes or until onion is golden brown
  • Stir in 1/4 cup of dry white wine & cook 1 minute
  • Add 8 cups of less-sodium beef broth and 1/4 tsp of chopped thyme
  • Bring to a boil
  • Cover, reduce heat, & simmer 2 hours
