Shrimp Fried Cauliflower Rice

  •  Heat 1.5tsp sesame oil in a large skillet over medium high
  • Add 10oz shrimp. Cook 3 min then remove
  • Return pan to medium high
  • Add 1.5tsp oil
  • Add 5 eggs, lightly beaten
  • Cook 2 minutes until almost set
  • Fold cooks eggs in half
  • Remove
  • Cool
  • cut into 0.5 inch pieces
  • Heath 2tbs oil in pan over medium high
  • Add 0.75 green onions and cauliflower
  • Cook 5 min
  • Stir in shrimp, eggs, pepper, and salt
  • top with remaining 0.25 cup green onions
