Spiced Lamb Chops with Chickpea and Carrot Saute
- Heat oven to 400
- Heat 1 tsp olive oil in large skillet over medium-high heat
- Season lamb with 1 tsp curry powder, 3/4 tsp salt, & 1/2 tsp pepper
- Brown lamb (2-3 min per side)
- Transfer to baking sheet
- Roast 4-6 min for midrare
- Wipe out skillet
- Heat tbs olive oil over medium-high heat
- Add carrots & cook 6-10 minutes
- Add garlic & cook 1 min
- Add 15 oz can of chickpeas, 1/2 tsp salt, & 1/4 tsp pepper & cook 2-3 minutes
- Star in lemon juice & dill
- Serve together
