Spiced Lamb Chops with Chickpea and Carrot Saute

  •  Heat oven to 400
  • Heat 1 tsp olive oil in large skillet over medium-high heat
  • Season lamb with 1 tsp curry powder, 3/4 tsp salt, & 1/2 tsp pepper
  • Brown lamb (2-3 min per side)
  • Transfer to baking sheet
  • Roast 4-6 min for midrare
  • Wipe out skillet
  • Heat tbs olive oil over medium-high heat
  • Add carrots & cook 6-10 minutes
  • Add garlic & cook 1 min
  • Add 15 oz can of chickpeas, 1/2 tsp salt, & 1/4 tsp pepper & cook 2-3 minutes
  • Star in lemon juice & dill
  • Serve together
