Marinated Feta With Seeded Crackers
12 oz. feta, drained
2 fresh rosemary sprigs
3 thin lemon slices
1 tbs. lemon juice
2 small dried chiles
bay leaf
1.5 cups olive oil
pie dough
egg
black sesame seeds
sweet smoked paprika
flaky sea salt
Cut feta into 2-in cubes and place in large glass jar with lid. Add rosemary, lemon slices, lemon juice, chilis, and bay leaf. Pour in olive oil until it covers the feta. Add a few grinds of pepper. Cover and refrigerate 12 hours to 2 weeks.
Preheat oven to 350. Line baking sheet with parchment paper.
Roll dough into a square. Trim edges. Cut in half. Cut each half into strips. Transfer to baking sheet. Refrigerate 15 minutes.
Whisk egg & 1 tbs water. Brush each pastry with the egg wash. Sprinkle each strip with sesame seeds, salt, & paprika.
Bake 16-18 minutes.
